Onion Pie

Topping:
4 onions, preferably red
1 tablespoon olive oil
25g butter
3 or 4 sprigs of thyme without stalks
150g cheddar cheese, or any other strong hard cheese grated

Dough:
250g plain flour
1 teaspoon baking powder
1 teaspoon salt
100ml milk
40g butter melted
1 teaspoon mustard
1 egg beaten

Preheat the oven to 200°C/Gas6.
Peel and half the onions then quarter each half. Heat up the oil and butter in a frying pan. Fry the onions for about half an hour or until soft and golden. Season with salt and pepper and add the thyme. Place this into a 24cm pie dish that you have buttered and scatter 50g of the cheese over the top of the onions.
Now put the flour, salt, cheese and baking powder into a bowl. Mix together the milk, melted butter, egg and mustard in another bowl and then pour onto the flour mixture. Mix this all together until the dough has formed. Tip this out onto a surface and shape it into a circle that will cover the pie dish. Place it on top of the onions and press the edges so that they seal in the onions.
Place in the over for 15 minutes then turn the heat down to 180°C/Gas 4 and leave it for another 10 minutes or until it is crisp and golden. Remove from the oven and let it stand for a few minutes then cover it with a large plate and quickly turn over so that the pie turns out onto the plate.
Really good cold for picnics if any is left over.

i always have a bad way at making the crust dear brother.... either it will be too soft or too crispy....

but the masala for this thing was not so spicy and i added some chili powder to SPICY it up for me......
