Yummy Yoghurt, Honey and Pistachio Cheesecake

Base:
150g/5½oz sweet biscuits eg. Digestive biscuits
55g/2oz blanched almonds
75g/2¾oz butter

Creamy bit:
500g/1lb 2oz Greek yoghurt
500ml/18fl.oz crème fraiche
120ml/8 tablespoons orange blossom honey
10ml/2 teaspoons orange flower water
rind and juice orange
1 sachet halal gelatine or vegetarian agar-agar

Topping:
60g/2¼oz chopped pistachios
icing sugar for dusting

Grease and line a loose-bottomed 22cm/8 ½ inch tin.
For the base, put the biscuits and nuts into a plastic bag and crush them with a heavy object. Melt the butter and then add the ground biscuit and nut mixture and stir together. Press this into the base of the tin and place into the fridge until firm, about 1 hour.
In a bowl mix together the yoghurt, crème fraiche, honey, orange flower water and orange rind. Put the orange juice into a pan and sprinkle over the powdered gelatine/ agar-agar. Leave this for 5 minutes and then heat gently to melt it. Pour this immediately onto the yoghurt mix stirring all the time. Pour this onto the biscuit base and put into the fridge until set, about 5 hours. You can leave this overnight or for longer if you wish to.
Take out the cheesecake and sprinkle with the chopped pistachios and dust with icing sugar.

I think i wanna try this one out.
Can someone just help me to know what is greek yoghurt? is it just the regular thick yoghurt?
And this gelatine, i think u'll get it with an artificial red color usually, and i think this will spoil the whole thing.

Is there such thing as halal gelatine?
I've never heard of it
I thought that gelatine was entirely haram
Can anyone clarify this point to me please

Greek Yoghurt is the slightly acid plain white yoghurt that we know in our countries as LABAN. simply.


as for the red color, I agree with you.


I usually replace artificial red color with natural ones

Oh. Sofia,

First welcome

second, of course, gelatin is not ALWAYS haram. though it could be.

Gelatin is simply yet one another animal origin product.

so if the cow or sheep of which the gelatin was extracted was slain according to islamic laws, then yes, the Gelatin is Halal.

This is the case of all gelatin that you get from countries such as Morocco for example.


Here in Europe, Nestlé and some other companies sell halal food prepared in Morocco with meat and gelatin. and we are confident that our muslim brothers in Morocco would always prepare the animals according to islamic laws.

so this is halal food.
