Amazing Apple Cake

Amazing Apple Cake

Main Mixture:
140g/3oz butter
200g/7oz caster sugar
2 eggs, beaten
85g/3oz self-raising flour
115g/4oz ground almonds
125ml/4floz milk
1 teaspoon vanilla essence
1 tablespoon boiling water
½ teaspoon baking powder

Topping:
8 prunes or dates or dried figs, chopped
115g/4oz shelled walnuts chopped and mixed with 2 tablespoons sugar
2 apples cored and sliced finely
3 tablespoons sugar
some ground cinnamon
some butter

Preheat oven to 190°C/375°F/Gas 5.
Rub a 25cm/10inch round tin with butter or oil to grease.
Beat together all the ingredients of the main mixture until creamy, a food processor makes this quicker!
Pour this into the tin.
On top, arrange the prunes (or dates or figs), spoon the walnut and sugar mix over this, and then arrange the apple slices in a pretty pattern.
Bake in the oven for 40 minutes or until a pale gold colour.
Stir together the sugar and as much cinnamon as you like (approximately 1 teaspoon).
Sprinkle the sugar and cinnamon over the cake, dot with little pieces of butter (approx. 15g/½oz in total) and put back into the oven for 20 minutes until delicious.
Cool in the tin on a wire rack for as long as you can resist.

What's shelled wallnuts? wallnuts with their shell intact?

no. caster sugar is sugar in powdery form. sugar that is much more softly grounded than normal crystal sugar.

of course not. but to keep the full flavor of walnuts you should remove the shells only before cooking.

That is, do not use walnuts which shells were removed long time before and preserved as such, which is a common practice in the market today

no. Almonds are what we call "Lawz". You grind that.

I didn't think of that thanx.

I went to the suppermarket and all I can find is "all purpose" flour and Zero Flour (this could be a brand name)
No self-raising
No-Self-destructing flour.
Is it ok if I use the All purpose?

Some of them barely speak and read Arabic. If I said "self raising" they may think I'm insulting them. I'll just try the All purpose.

I asked them about shelled walnuts and they almost laughed out loud I felt I'm a strange man in my own country.

and how come they don't speak arabic, where are they from?
